If you're like me, you are constantly listening for 'giving' opportunities to arise! Like when a lovely friend mentions that some Oatmeal cookies is all that is needed to make them happy....and no one EVER makes any for them! lol so there ya go!
This gift is in the early stages....
- find box in 'containers for giving' stash. check!
- shred Easter colored tissue paper (I love shredding things!) check!
- bake cookies check!
- remember to take a 'before' picture of the box check!
Best Oatmeal Cookies Ever! (Don't you love that name? but they really are!)
Preheat oven to 350 degrees.
Whisk together & set aside...
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
Now combine the following with a HAND-MIXER on low.
- 1 cup unsalted butter, softened
- 1 cup dark brown sugar, firmly packed
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla
Stir the flour mixture into the creamed mixture, until flour is no longer visible.
Then stir in
- 3 cups oats (not instant)
- 1 1/2 cups raisins
Place 2 inches apart. Spray with non-stick spray. ( I use parchment paper)
Bake 11-13 minutes until golden.
Remove from oven BUT let them sit for 2 minutes before moving them to a cooling
rack.
I had copied this recipe from a magazine forever ago. If you stay true to the details in this recipe, you'll throw out all your other oatmeal cookie recipes! lol
